ALICIA'S ZUCCHINI CAKE 
2 1/2 c. flour
1 1/4 c. sugar
1 tbsp. cinnamon
1 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
2 c. zucchini, shredded (3 med. sized squash)
1 c. cooking oil
3 eggs

In a large bowl, blend all ingredients and beat two minutes at high speed. Pour into greased and floured 12 cup Bundt pan or two loaf pans. Bake at 325 degrees for 60 to 70 minutes. Cool in pan for 30 minutes. Frost with a package of coconut almond frosting or confectioners sugar with 1 teaspoon of almond extract added.
