1 tbsp. butter
2 tbsp. flour
2 egg yolks
1/2 c. sugar
1 c. buttermilk
1 tsp. lemon extract
1 pastry shell
Meringue is optional

Blend butter and flour. Add yolks to sugar. Beat together buttermilk and extract. Pour in filling. Bake at 425 degrees for 10 minutes.
