HALIBUT MOUSSE | |
1 c. light cream 2 c. bread crumbs from white bread 1 lb. raw halibut, ground or chopped fine 1 tsp. salt 1/8 tsp. nutmeg 4 egg whites Stir cream into bread crumbs; add halibut, salt, and nutmeg. Beat until stiff; fold into fish mixture. Spoon into a greased loaf pan. Place the pan in a large pan of hot water. Bake at 350 degrees for 45 minutes, or until firm. Let stand 10 minutes before slicing. Makes 6 servings. |
