PORCUPINE MEATBALLS | |
1 lb. ground beef 1 tbsp. onion salt 1/4 tsp. pepper 1/2 tsp. chili powder 1 egg, beaten 1/3 c. rice 2 tbsp. oil 3 c. tomato juice Combine ground beef and seasonings in bowl. Add egg, mix well. Stir in rice, blend well. Shape into 1 1/2 inch balls. Brown meatballs in hot oil in skillet. Add tomato juice. Simmer for 35 to 40 minutes or until rice is cooked. Yield: 5 servings. |
