BEET CAKE 
1 c. oil
1/2 c. butter
3 eggs
2 c. sugar
2 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1/2 c. cottage cheese
1 c. diced beets
1 c. chopped nuts
1 c. drained crushed pineapple
1 c. coconut
2 tsp. vanilla

Melt together oil and butter. Beat eggs, add sugar, add cooled oil and butter. Mix and beat well. Add pineapple, beets, cottage cheese. Add dry ingredients. Bake in greased and floured 11x14 inch pan. Bake at 350 degrees for 45 to 50 minutes.

CREAM FROSTING:

1 (12 oz.) cream cheese
1 box powdered sugar
