STEAMED FIG PUDDING 
Preheat oven to 325 degrees.

Beat until soft: 1/2 c. shortening

Add gradually: 3 egg yolks beaten, reserve egg whites

Put through a grinder or chop: 1 apple, peeled and cored

Add: 1 c. chopped pecans 2 tsp. grated orange rind 1/2 tsp. cinnamon 1/8 tsp. cloves 1/8 tsp. powdered ginger 1 1/2 c. dried bread crumbs 2 tsp. baking soda

Whip reserved egg whites until stiff and fold into mixture. Pour into greased oven-proof bowl and steam slowly 4 hours. Serves 14. Yummy!

This is great with Texas figs!
