STEAMED PUDDING 
8 c. flour
3 tsp. salt
Dash nutmeg
2 lb. suet
2 lb. raisins
About 4 1/2 c. water

SECOND MIX:

3/4 lb. butter
2 handfuls brown sugar

Mix first mix together. Makes thick paste. Place large dish towel in large bowl and flour the towel lightly. Using about 1/2 of the dough, put this half into towel. Make an indentation in middle. In this hole, put second mix (that has been mixed thoroughly) and cover with second half of dough - sealing the edge all around. Pull up sides of towel and tie tightly with string at top of dough. Place in large pot of boiling water. Boil 6 hours. Will float but must be lots of water. Serve hot with warm or hot sauce.

SAUCE FOR PUDDING:

2 c. brown sugar
1/3 c. flour

Mix together and add 1 1/2 cups cold water. Mix well and let come to boil. Boil 1 minute, add 2 tablespoons vinegar, 2 tablespoons molasses and 2 tablespoons butter.
