1 lg. onion 1 pkg. carrots 1 bunch celery 2 med. green peppers 1 to 2 cans mushrooms 1/4 c. shredded cheddar cheese 1 to 4 tbsp. melted butter 1/2 to 3/4 c. water 1/2 stick butter Dry bread crumbs Prepare onion, carrots, celery and peppers by cleaning and cutting into medium size pieces. Drain mushrooms. Place in baking dish with water, seasoning, dot with stick butter. Cover. Bake 1 1/2 hours at 300 to 325 degrees. Combine cheese, bread crumbs and melted butter. Spoon over vegetables. Bake uncovered 15 more minutes or until cheese is melted and topping is brown. I precook carrots, celery and peppers for 10 minutes at a slow simmer. |
