BANANA MUFFINS/LOAF | |
2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 1/2 sticks butter 3 eggs 1 1/4 c. sugar 4 ripe bananas, mashed 2 tbsp. sour cream 1 c. chopped walnuts; optional 1 c. chocolate chips; optional 1 tsp. vanilla extract Preheat oven to 350 degrees. In bowl, sift together flour, baking powder, and baking soda and set aside. In separate bowl cream butter, eggs, and sugar together. Add mashed bananas. Stir the dry ingredients into this butter mixture, then add sour cream and mix well. Blend in nuts, chips, and vanilla. Grease a loaf pan and pour the mixture in it (or line cupcake tins for muffins). Bake the loaf for 50 minutes or until done (cupcakes take 10-15 minutes). |
