BLUEBERRY RICOTTA SQUARES 
1 c. flour
3/4 c. sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
1/3 c. milk
1/4 c. shortening
1 egg
1/2 tsp. vanilla
1 1/2 c. fresh or frozen blueberries
2 eggs
1 1/4 c. Ricotta cheese
1/3 c. sugar
1/4 tsp. vanilla

In a mixer bowl combine flour, 3/4 cup sugar, baking powder, and salt. Add milk, shortening, 1 egg, and 1/2 teaspoon vanilla. Beat at low speed until combined. Beat at medium speed for 1 minute.

Pour batter into greased 9x9x2 pan. Sprinkle blueberries over batter. Beat 2 eggs with a fork; add Ricotta cheese, 1/3 cup sugar and 1/4 teaspoon vanilla. Spoon over blueberries and spread evenly. Bake at 350 degrees for 60 minutes or until knife inserted in center comes out clean. Cool before serving.
