CHINESE PEPPER STEAK 
2 lb. sirloin or round steak
2 tbsp. shortening
2 tbsp. minced onion
2 tbsp. minced garlic or garlic powder
2 lg. green peppers, sliced into long strips
1 c. celery, sliced crosswise
1 lg. jar pimentos
1 lg. can sliced mushrooms
1 lg. can water chestnuts, thinly sliced
Soy sauce, about 2 tbsp.
Cornstarch, about 2 tbsp.
Pepper, to taste
1 tsp. salt
3 c. cooked rice

Slice meat into long strips and brown in shortening. Mix together cornstarch and enough cold water to make a paste. Add to meat and stir to make gravy. Add all other ingredients except peppers and celery. Cover and simmer for 15 minutes. Add peppers and celery and simmer, covered, for an additional 5 minutes. Add more cornstarch and water mixture as needed for sufficient gravy. Serve over hot rice. Makes 4 servings.
