3 med. stalks celery
6 bunches carrots
7 1/2 bunches radishes
6 bunches onion

FOR 100:
4 med. stalks celery
8 bunches carrots
10 bunches radishes
8 bunches of onions

Crisp vegetables in refrigerator or ice water for a short time before serving.
