EASY CARROT CAKE | |
1 1/2 c. oil (12 oz.) 2 c. sugar 4 eggs Beat 4 minutes in large bowl. 2 c. (16 oz.) junior baby food carrots 3 c. sifted all-purpose flour 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon Add to sugar, egg mixture, blend in with spoon. Add last: 1 1/2 c. chopped walnuts 1 c. raisins Pour into greased and floured stem pan. Bake at 350 degrees for 1 hour. Glaze or sprinkle with confectioners' sugar. |
