3 c. leftover roast "beast" or steak, cubed
1 lb. potatoes, cut into cubes
1 med. onion, chopped
1 med. green pepper, chopped (optional)
2 med. to lg. tomatoes, peeled and chopped
Salt and pepper to taste
1 c. shredded Monterey Jack or Cojack cheese, (optional)

Oven at 350 degrees. Generously grease a 9 x 13 inch baking dish. Put in potatoes, then meat, green pepper, onions, tomatoes, and seasonings. Stir lightly, just enough to mix seasonings. Cover with foil and bake 1 hour or until potatoes are done. Remove casserole from oven. Turn off oven. Carefully remove foil. Sprinkle cheese over stwho. Return to 'turned off' oven to melt cheese, about 5 minutes. Yield: 6 servings.
