SPINACH AND BROCCOLI CASSEROLE 
1 box frozen chopped spinach
1 box frozen chopped broccoli
1 c. sharp cheese, grated
1 can cream of mushroom soup
1/2 c. mayonnaise
2 eggs
1 onion, chopped
1/2 tsp. salt
Pepper to taste

Beat eggs; add remaining ingredients. Cook spinach and broccoli; drain. Place in casserole dish. Top with crushed Ritz crackers. Bake in 350 degree oven 40 to 50 minutes.
