TAMALE PIE | |
1 sm. box Jiffy corn muffin mix 1 lb. lean hamburger or sausage 1 sm. onion 1 sm. green or red pepper 1 can cheddar cheese soup or nacho cheese soup 1/4 c. water 1 jar med. salsa (3/4 c.) 3 oz. colby shredded cheese Brown and drain 1 pound lean hamburger or sausage, chopped onion, 1/4 cup chopped green pepper. Heat in medium saucepan, one can of cheddar cheese (or nacho cheese) soup, 1 jar medium salsa and 1/4 cup water. Simmer for 5 minutes. Add cooked hamburger. Mix cornbread muffin mix according to package directions. Pour 1/2 cornbread mix into casserole dish. Pour meat and soup mixture over cornbread mix. Top with other half of cornbread mix, spreading with knife to cover meat mixture. Top this with 3 ounces colby cheese, shredded. Heat in preheated 350 degree oven for 30-35 minutes or until golden brown. |
