SHRIMP FOO YOUNG 
1/2 lb. shrimp (diced and marinate for 20 min.)
8 eggs + 1/2 tsp. salt (well beaten)
1/2 lb. bean sprouts
1 sm. can sliced mushrooms
7 water chestnuts
1 slice ginger root
14 tbsp. oil

SHRIMP MARINADE:

1/2 tsp. salt
1/2 tsp. sugar
Sprinkle pepper
Dashes sesame oil

1. Heat 2 tbsp. oil (high). Brown ginger, discard. Stir-fry bean sprouts with a sprinkle of salt for 1-2 minutes; remove.

2. In a large bowl, combine shrimp, mushrooms, water chestnuts, bean sprouts and egg together.

3. Separate mixture into 3 batches. Heat 4 tbsp. oil (medium) each time. Fry it one at a time, when egg becomes solid and golden on both sides (like frying pancakes).
