CANNOLI FILLING - RICOTTA & CREAM CHEESE SABRINA STYLE | |
Two cheese makes a world of difference! Strain overnight with a cheese cloth. I line a strainer with cheese cloth. 1 (16 oz.) tub ricotta cheese (dry and strained) 1 cup heavy cream 1 cup confectioners' sugar 1/2 cup cream cheese (plain and NOT fat free) 1/2 tsp. vanilla extract (I put a drop more for flavor) Note: Vanilla is really strong, so be careful not to add too much! 1. Strain ricotta overnight with a cheese cloth. I line the cheese cloth in a mesh strainer then put that over a bowl. Place ricotta in the cheese strainer (start in the morning - the drier the better but no more than two overnights). Make sure you mix it a little so the ricotta will evenly strain as much as possible. Maybe twice during the day. One if you're up at night! 2.
