CANNOLI FILLING - RICOTTA &
CREAM CHEESE SABRINA STYLE
 
Two cheese makes a world of difference! Strain overnight with a cheese cloth. I line a strainer with cheese cloth.

1 (16 oz.) tub ricotta cheese (dry and strained)
1 cup heavy cream
1 cup confectioners' sugar
1/2 cup cream cheese (plain and NOT fat free)
1/2 tsp. vanilla extract (I put a drop more for flavor)

Note: Vanilla is really strong, so be careful not to add too much!

1. Strain ricotta overnight with a cheese cloth. I line the cheese cloth in a mesh strainer then put that over a bowl. Place ricotta in the cheese strainer (start in the morning - the drier the better but no more than two overnights).

Make sure you mix it a little so the ricotta will evenly strain as much as possible. Maybe twice during the day. One if you're up at night!

2. Mix all ingredients on a low speed until finely mixed.

3. Fill shell and enjoy!

I wish my mom would have told me to drain the ricotta. This was her 99th birthday and she wanted good old Sicilian Canolli. Her recipe said 'nothing' about draining it, so naturally it never thickened. I'm so upset!

Yes you can freeze air tight but not for too long. Sometimes freezing dairy causes a different consistency. Put in fridge to defrost.
