BANANA MOUSSE 
6 very ripe bananas
1 1/2 c. unsweetened applesauce
2 tbsp. carob powder
1/4 tsp. vanilla extract

Blend the applesauce and the bananas in a food processor using the steel blade. (Cut the bananas into quarters and add them to the blending applesauce one piece at a time.) Add carob powder and vanilla extract. Continue to blend until the mixture is smooth and all of the bananas have been blended with no chunks remaining. Spoon into individual dessert cups. Refrigerate for 30 minutes before serving. Serves 4.
