LEMON MUFFINS 
6 tbsp. chopped almonds
3 tbsp. sugar
1 tsp. nutmeg
2 c. flour
1 tbsp. baking powder
1/2 c. sugar
1/4 tsp. grated lemon rind
2 eggs
1/2 c. oil
1/3 c. milk
3 tbsp. lemon juice

Mix all together at once just until moistened. Use cupcake papers in muffin tin. Bake at 350 degrees for 20 minutes. Yield 12 to 15 muffins.
