CARAMEL CREAM CHEESE FROSTING 
7 vanilla caramels
1 (3 oz.) pkg. cream cheese, softened
2 1/2 c. sifted confectioners' sugar
1/8 tsp. salt

Combine caramels and 1 tbsp. hot water in a 2 cup glass measuring cup. Place in small saucepan of gently boiling water. Heat and stir until caramels melt and sauce is smooth. Cool.

Beat together cream cheese and sugar. Add cooled caramel sauce and salt and mix well. Makes 1 1/4 cups frosting and will frost a 1 layer cake or 18 cupcakes.
