NOODLE AND TOFU CASSEROLE | |
1 lb. flat egg noodles 2 lb. tofu, cubed 1 lg. head broccoli, cut up 1 med. onion, chopped Mushrooms, sliced 3 cloves garlic, pressed 2 c. tomato sauce 1/2 lb. grated Cheddar cheese Tamari to taste Cook noodles as directed. Drain. Put back in pot and add 1 cup tomato sauce. Saute tofu in a little oil with 1 or 2 cloves garlic until golden. Remove and add to noodles. In same pan, saute remaining garlic, onions, mushrooms and broccoli. When broccoli is cooked but still crunchy, remove and add to noodles and tofu. Add tamari to taste. Cover bottom of casserole dish with 1/2 cup tomato sauce. Add noodles, tofu and vegetables; top with grated cheese and remaining sauce. Bake at 350 degrees for 35 minutes. |
