GRANDMA'S GERMAN POTATO SALAD | |
5 lbs. potatoes 1 lb. bacon 2 lg. onions, sliced thin 1 1/2 c. vinegar 1/3 c. parsley flakes 2 c. water 1/2 c. sugar Cook potatoes. Cool, peel, and slice thin. Cut bacon into small pieces. Cook. Add 2 cups water to fry pan. Add 1 1/2 cups vinegar to fry pan. Warm. Add sugar to taste, may be up to 1/2 cup. (Vinegar and water amounts are sometimes adjusted to quantity of grease gotten from bacon.) Put potatoes in large roasting pan. Add onion. Sprinkle parsley. Pour bacon grease mixture over potatoes. Stir. Bake until onions are cooked. |
