LOIS DUTCH CHOW CHOW | |
1 pt. sliced cucumber, unpeeled 1 pt. chopped red and green sweet peppers 1 pt. chopped cabbage 1 pt. sliced onions 1 pt. chopped green tomatoes 1 pt. lima beans 1 pt. cut string beans 1 pt. cauliflower 1 pt. corn 1 pt. chopped celery 1 pt. sliced carrots 2 tbsp. celery seed 4 tbsp. mustard seed 1 qt. vinegar 2 c. water 4 c. sugar 4 tbsp. turmeric Soak cucumbers, peppers, cabbage, onions, and tomatoes in salt water overnight (1/2 cup salt to 2 quarts water). Drain. Cook beans, cauliflower, carrots and celery until tender. Drain well. Mix soaked and cooked vegetables and corn with the remaining ingredients and boil 1/2 hour. Place in sterilized jars and seal at once. |
