MANDARIN CHICKEN SALAD 
2-3 c. diced, cooked chicken breast
1 c. diced celery
2 tbsp. lemon juice
1 tbsp. minced onion
1 tsp. salt
1/3 c. mayonnaise
1 c. seedless grapes
1 (11 oz.) can mandarin oranges, drained
1/2 c. slivered almonds, toasted

Combine chicken, celery, lemon juice, onion and salt. Chill. Add mayonnaise, grapes, oranges and almonds. Toss well. (This might need slightly more mayonnaise.) Serve on lettuce leaf with a few orange slices for decoration and dash of paprika on top.
