6 lb. red potatoes 1 lb. bacon 3 tsp. salt 4 tbsp. flour 1 tsp. baking powder 1/4 tsp. white pepper 8 eggs, slightly beaten 1 med. onion, chopped 1 tsp. baking soda 12 oz. can evaporated milk Dice bacon and fry until almost crisp. Add chopped onion and saute until golden. Set aside. Peel and grate potatoes. Add eggs, salt, evaporated milk, flour, baking powder and baking soda. Add bacon and onion to the potato batter and mix well. Pour into a greased baking dish. Place into a preheated oven at 450 degrees for 10 minutes. Lower oven temperature to 350 degrees and bake until edges are crispy brown about 1 1/2 hours. |
