GRILLED LIME CHICKEN BREAST 
4 boneless and skinless chicken breasts, 1/2 lb. each
1/3 c. olive oil
Juice of 2 limes
4 cloves garlic, peeled and minced
1/2 tsp. salt
3 tbsp. fresh cilantro, chopped
1/2 tsp. freshly ground black pepper
Red and yellow peppers, roasted (optional)

Trim fat from chicken breasts and cut out middle tendon. Pound between waxed paper to flatten slightly. Combine olive oil, lime juice, garlic, 2 tablespoon cilantro, salt and pepper in a bowl. Pour over chicken and marinate for 30 minutes.

Grill or broil the meat for 2 minutes on each side or until 160°F on an instant read thermometer.

Remove to serving dish. Sprinkle with remaining cilantro and serve with roasted red and yellow peppers on the side.

Great for outdoor grilling!
