CORNMEAL MUFFINS 
1 1/2 c. sifted flour
3/4 c. cornmeal
1/2 c. sugar
4 tsp. baking powder
1 tsp. salt
2 eggs, beaten
3 tbsp. melted butter
1 c. milk

Sift together dry ingredients; combine eggs, butter, and milk. Add to dry ingredients, stirring just enough to moisten. Spoon batter into greased muffin pan, filling cups 2/3 full. Bake at 400 degrees for 15 minutes.
