CORN WAFFLES 
1 1/8 c. sifted flour
1 tsp. salt
2 tsp. baking powder
1/8 tsp. white pepper
2 eggs
1/2 c. milk
2 c. sweet corn, canned or freshly grated
4 tbsp. melted butter

Heat the waffle then sift all dry ingredients together. Beat the eggs well and combine with the milk, then add to the dry ingredients, beating until smooth. Drain the corn and add to the mixture then stir in the cooled butter. Pour the batter into the hot iron, filling each compartment 2/3 full (about 1 tablespoon of batter in each will do this). Cover and bake 3 to 5 minutes, until waffles are golden brown. Serve with butter and sugar syrup or powdered sugar.
