SWEET CORN CHOWDER 
1/2 lb. bacon, chopped
2 lg. onions, sm. diced
6 ears sweet corn, shucked & kernels removed
4 lg. potatoes, peeled & cubed
2 qt. whole milk
1 each lg. red pepper, med. diced
4 tbsp. parsley
Salt & fresh cracked black pepper to taste

In a large, heavy pot, saute bacon until crisp. Remove from pot leaving enough fat to saute onions. Saute onions in bacon fat but be careful not to brown. Add potatoes and milk; cook slowly until potatoes are soft. When soft, puree in a blender. Add the smooth puree back to the pot. Repeat the blender step two times. Saute the red peppers and add to soup with corn, parsley, salt and pepper. Heat slowly until soup is hot and serve garnished with bacon from before.
