BROCCOLI-HAM SHORTCAKE | |
1/4 c. butter 1/4 c. all-purpose flour 2 c. milk 4 oz. cheddar cheese, cut in small cubes (1 cup) 1 pkg. (10 oz.) frozen chopped broccoli 8 oz. chunk of ham, cut in small cubes (1-1/2 cups) 1 pkg. (10 oz.) corn-bread mix, prepared to pkg. directions Melt butter in a medium size saucepan over low heat. Add flour and stir constantly until smooth and frothy. Let mixture bubble about 3 minutes, stirring often to prevent browning. Gradually stir in milk. Increase heat to medium and simmer, stirring often, about 5 minutes until thick and smooth. Add cheese, frozen broccoli and the ham. Cook stirring occasionally, until cheese has melted and broccoli is cooked. Cut corn bread into 4 equal pieces. Slice each in half horizontally. Place bottoms on serving plates; top with half the sauce, then the remaining corn bread and remaining sauce. Makes 4 servings. |
