POLYNESIAN WEDDING CAKE | |
1 sm. can crushed pineapple (use juice) 2 c. shredded carrots 1 c. nuts 2 c. flour 2 tsp. baking soda 1 1/2 c. oil 2 c. sugar 3 eggs 2 tsp. cinnamon 2 tsp. vanilla 3/4 pkg. coconut (other 1/4 for frosting) Combine all ingredients in large bowl. Put in greased and floured 9x13 pan. Bake in preheated oven at 350 degrees for 50 minutes. CREAM CHEESE FROSTING: 1 (3 oz.) pkg. cream cheese 1/4 c. butter 1 tbsp. vanilla 2 c. sifted powdered sugar In mixer, beat cream cheese, butter, and vanilla until light and fluffy. Gradually add powdered sugar, beating until smooth. Spread over cooled cake. Top cake with coconut. |
