ARTICHOKE BALLS 
1 lg. can artichoke hearts packed in water, mashed
1 beaten egg
1/4 c. olive oil
1/2 c. Italian flavored bread crumbs
1/4 c. Parmesan cheese, grated
Salt and pepper to taste

Combine all ingredients and roll into small balls. Bake in 350 degree oven for about 20 minutes until heated through. These should be cooked on a greased cookie sheet to prevent sticking. NOTE: Balls can be frozen before baking.
