TURKEY TETRAZINI 
2 c. diced turkey
1 lb. tetrazini noodles
1/2 c. chopped carrot
1/2 c. chopped celery
1/2 c. chopped onion
1/2 lb. sliced mushrooms

SAUCE:

1 tbsp. lemon juice
1/4 c. butter
1/4 c. sifted flour
2 c. turkey stock
1 c. milk
1/2 c. white wine
1 c. heavy cream

Saute veggies in butter. Cook noodles according to package.

SAUCE: Melt 1/4 cup butter in large saucepan. Add flour and make light roux. Add 1 cup heavy cream; heat until sauce starts to thicken. Add milk, turkey stock, wine, lemon juice, salt and pepper. Heat until thickened.

Pour over meat and veggies and top with 1 cup grated cheese. Bake at 350 degrees for 45 minutes.

I used less noodles and had to add an addional 1/4 cup flour to thicken the sauce - there is a lot of liquid for the amount of roux.

"Tetrazini noodles"? It's your basic broken up spaghetti or broken bits of other pastas from the bottom of the box, saved in a jar for misc. pasta additions to soup or whatever! (We don't waste food here.) I've got a picture of people in a grocery store looking for "Tetrazini noodles" among the selections on the shelves, lol.
