APRICOT GLAZED PORK KABOBS 
1 lb. boneless pork loin cut into 1" cubes
1 (10 oz.) jar apricot preserves
4 tbsp. orange liqueur or orange juice
4 tbsp. butter

Stir together preserves, liqueur or orange juice. Simmer in small saucepan until the butter is melted; cool. Place pork cubes in plastic bag. Pour 3/4 of orange mixture over cubes to coat. Marinate for 30 minutes. Thread pork cubes onto skewers, (soak wooden skewers for 1 hour in water to prevent burning). Grill over hot coals for 10-12 minutes, basting often with reserved marinade. Warm any remaining sauce for dipping. Serve with salad or vegetables, French bread or corn pone. Serves 4 (309 calories per serving).
