SQUASH CASSEROLE 
2 lg. squash
1 onion
1 can cream of chicken soup
1 c. sour cream
1 c. carrots
8 oz. stuffing mix
1/2 c. butter

Cook squash and onion 5 minutes, drain. Mix soup, sour cream, and carrots. Add to squash. Mix stuffing and butter. Line bottom of pan with half the stuffing mix. Pour in squash and add other half of stuffing mix on top. Bake 30 minutes at 350 degrees.
