ART'S BROCCOLI SOUP WITH MATZAH BALLS | |
Broccoli - as much as you want Onions - as much as you want Green peppers, seeded then sliced thin Butter - generous amount Salt and pepper to taste Sugar - a goodly amount Cinnamon to taste Ginger to taste Matzah balls - made from a mix Put broccoli in large pot with water to cover, and cook until soft. Meanwhile, saute onions and green peppers in butter. When broccoli is very tender, chop all broccoli into small pieces. Do not throw out water from broccoli. This serves as the soup base. Now take chopped broccoli and blend in blender with sauteed onions and peppers and water that the broccoli was cooked in. Place all back in original large pot and season with salt, pepper, sugar, cinnamon, ginger. Make matzah balls according to mix. Either cook in water, then add to soup, or cook directly in soup. |
