"HOT" CORN BREAD 
3 c. corn meal mix
2 1/2 c. milk
3 eggs
1 onion, chopped fine
1/2 c. Wesson oil
2 1/2 c. Cheddar cheese, grated
1 sm. jar chopped pimento
1/2 c. jalapeno peppers or any hot pepper, chopped fine
1 can cream corn (sm. or lg.)
1 lb. sausage, heated until grease out, drain
1/4 lb. cooked crumbled bacon or ham (optional)

Mix all ingredients in order well and pour in large pan, 10 1/2 x 15 1/2 x 2 inches. Bake at 400 degrees for 40 to 45 minutes. Will start to turn brown on top.

NOTE: If cooked in smaller pan, split batter or will be gummy.
