PASSOVER CREAM CHEESE PIE 
1/4 c. sugar
1/4 c. shortening
1/4 tsp. cinnamon
1 3/4 c. sponge cake crumbs

Cream shortening with cinnamon and sugar. Work in crumbs. Press mixture as evenly as possible into bottom and sides of a 9 inch pie plate. Bake at 350 degrees approximately 7 minutes until golden brown, cool.

FILLING:

9 oz. cream cheese
3 tbsp. sugar
2 egg yolks
2 egg whites
1/2 pt. thick sour cream
2 tbsp. sugar

Combine cream cheese with sugar. Add egg yolks, 1 at a time, beating until smooth. Beat whites until stiff, but not dry. Gently fold cheese mixture into whites. Pour into crust. Bake in 375 degree oven for 8 minutes.

Meanwhile combine sour cream with sugar. Quickly spoon cream over baked cheese mixture. Bake 5 minutes longer, cool. Chill 5 hours or overnight. Serve cold. Serves 8.
