CHERRY CHEESE CUPCAKES 
2 (8 oz.) pkg. cream cheese
1/2 c. sugar
1 tsp. vanilla
3 eggs
Vanilla wafers
1 can cherry pie filling
1 pkg. silver cupcake papers
1 Hershey chocolate bar

Beat together cream cheese, sugar, eggs, and vanilla. Fill cupcake liner with a vanilla wafer, then put 1 heaping tablespoon of mixture into each liner. Bake 10-15 minutes at 375 degrees. When cool, spoon a bit of pie filling on top. Then shave chocolate bar with potato peeler to garnish top of cheesecake. Great for entertaining a big crowd. Make the day before, too.
