RICE PIES 
1/2 lb. rice (use regular rice)
1/4 lb. butter
2 c. sugar
1/4 c. milk
6 eggs, well beaten
1 tsp. vanilla
Enough chopped citron to taste
2 lbs. ricotta cheese

Cook rice, add salt (use regular rice). Mix cooked rice, butter. Add sugar and milk. Add eggs and vanilla. When cooled a bit add the ricotta cheese and citron; mix well. Pie crust can be used if preferred. Otherwise after mixture is thoroughly mixed pour into Pyrex dishes and cook for about one hour or until you can cut into pie and blade is clean. Set oven to 350 degrees.
