ROAST BEEF 
Bottom round roast

Put thermometer in middle of meat, fat side up. Garlic, salt, and pepper liberally. Put in 450 degree oven for 20 minutes to sear. Open oven door to cool to 250 degrees; then close door with temperature on 150 degrees. Cook until thermometer is on 140 for an hour or more, depending on how done you want it; 150 for more done.
