ZUCCHINI QUICHE 
1 c. chopped zucchini
1 c. chopped tomato
1/2 c. chopped onion
1 (8 oz.) pkg. shredded mozzarella cheese
1/3 c. grated Parmesan cheese
1 c. milk
2 eggs
1/2 c. Bisquick
1/2 tsp. salt
1/4 tsp. pepper

Grease 10" pie pan. Sprinkle with zucchini, onion, tomato, mozzarella and Parmesan cheese. Place remaining ingredients in blender or processor. Blend for 15 seconds. Pour over zucchini mixture. Bake at 400 degrees for about 35 minutes.
