VEGETABLE CASSEROLE 
20 oz. pkg. California Blend vegetables (or broccoli and cauliflower mix)
8 oz. Velveeta cheese or cheese spread
1 tube Ritz crackers, crumbled
1 stick butter

Cook vegetables as directed on package. Drain. Place in 7 x 10 inch loaf dish. Cube cheese and spread over vegetables. Stir melted butter into cracker crumbs. Spread over vegetables and cheese. Bake 20-30 minutes at 350 degrees. Serves 6-8. NOTE: Don't overcook your vegetables.
