SHRIMP JAMBALAYA 
1/4 c. cooking oil
5 lg. onions, chopped
1 pod garlic
1/2 c. celery & bell pepper, chopped
1 qt. peeled shrimp
3 c. raw rice
4 1/2 c. water
Parsley and shallots
Salt and pepper

Brown onions in oil until very dark brown. Add a little water and simmer for a few minutes. Add garlic, celery and bell peppers. Cook 15 minutes. Add shrimp, salt and pepper. Cook, covered, for 20 minutes on low fire, stirring often.

Add rice and fry in the above mixture for 15 minutes. Add water, parsley and shallots. Add more salt and pepper, if needed. Let come to a boil. Stir carefully a few times. Lower fire and cover. Cook until rice is cooked. Serve hot. Serves 10-12.
