SEITAN SOST TACOS 
1/2 lb. pkg. seitan, drained and sliced
1 c. olive oil
5 tbsp. fresh lime juice
3 cloves garlic, minced
1/2 tsp. crushed red pepper
2 tbsp. minced cilantro
2 tbsp. canola oil
1 med. onion, thinly sliced
1 red bell pepper, seeded and sliced
6 whole wheat tortillas

In small bowl, combine seitan with olive oil, lime juice, garlic, red pepper and cilantro. Marinade 1 hour. In a wok, heat oil and cook onion and bell pepper for 5 minutes. Add seitan and cook another 5 minutes. Serve filling in a steamed tortillas. Top with salsa, sour cream, guacamole, cheese.
