PINEAPPLE-CHEESE MOLD 
1 env. unflavored gelatin
1 c. unsweetened pineapple juice
1 pkg. (8 oz.) cream cheese, softened
2 tbsp. non-caloric liquid sweetener
1 tsp. vanilla extract
1/2 c. instant non-fat dry milk
1/2 c. ice water
2 tbsp. lemon juice

In a saucepan, sprinkle gelatin over pineapple juice. Cook over low heat, stirring until gelatin is dissolved. Remove from heat.

In a bowl, beat cream cheese until smooth. Add liquid sweetener and vanilla. Mix well. Add gelatin mixture a little at a time, mixing well after each addition. Chill until thickened.

Combine dry milk and ice water in a chilled bowl. Beat until soft peaks form. Add lemon juice. Fold gelatin mixture into beaten milk. Spoon gently into cups. Chill until firm.
