CHOCOLATE CREAM PIE 
1 1/2 c. canned evap. milk
1 1/2 c. water

Put water in bottom of double boiler. Mix water and canned milk in top of double boiler and put on low flame.

3 heaping tbsp. cocoa
4 1/2 heaping tbsp. flour
6 egg yolks

Mix well in large mixing bowl. Take 1/2 cup milk out of pot and mix with dry ingredients. Beat until creamy. When milk is hot, pour this mixture in stirring constantly. Cook until thick, like pudding. When done, add: 1 tbsp. butter.

Stir until butter melts.

This recipe makes 2 pies.

Variations:

Coconut Cream: Add 1 cup coconut when adding vanilla and butter.

Pineapple Cream: Add drained crushed pineapple and 1/2 tablespoon more flour.

Lemon: Instead of milk, use water, the juice of 2 large lemons, grated rind and no vanilla.

MERINGUE:

Beat egg whites until slightly stiff.

Add: 1 tsp. vanilla.
