SOUR CREAM POTATO CASSEROLE 
Cook 4 to 5 medium potatoes; cool, peel and slice.

Melt:

2 tbsp. butter
1/2 c. finely chopped onion

Saute until tender.

Combine:

1 c. sour cream
2 well beaten eggs
1 tsp. salt
1/2 c. grated cheese

Alternate in 1 quart casserole layers of salted sliced potatoes with layers of sour cream mixture and onions. Top with 1/2 cup cream crumbs, if desired.

Bake at 350 degrees for 20 minutes. Do not over bake.
