SALISBURY STEAK 
2 slices white bread
1/4 c. milk
1 3/4 lbs.medium lean ground beef
1 tsp. salt
Freshly ground pepper
1 tsp. Worcestershire sauce
4 strips bacon, cooked and crumbled
1/3 c. bread crumbs

MADEIRA MUSHROOM SAUCE:

2 tbsp. butter
1/2 lb. button mushrooms, wiped clean and halved
4 tsp. flour
1 c. condensed beef broth
1 tsp. Worcestershire sauce
1 tbsp. minced chives
3 tbsp. sweet Madeira wine

For steaks: Remove the crusts from the bread. Soak it in milk until soft. Squeeze out excess milk. Lightly mix the moist bread with the ground beef until thoroughly absorbed. Add salt, pepper and Worcestershire sauce. Combine and shape meat into a large round, about 1 inch thick. Preheat the broiler. Place meat on an oiled broiler rack. Cook 4 inches from heat on one side for 5 minutes; then turn and sprinkle bacon and bread crumbs over the top. Broil another 4 to 5 minutes for medium rare; add another minute each side for more well done..

For sauce: Melt butter in a heavy skillet over moderately high heat. Add mushrooms. Saute 3 to 4 minutes until golden. Push mushrooms to side of pan. Blend in flour slowly. Stir in broth. Cook and stir until thickened. Add remaining ingredients. Cook and stir 3 to 5 minutes. Serve over steak. Serves 4.
